Ume Plum Liqueur

Ume plum liqueur, often referred to as umeshu (梅酒), is a traditional Japanese liqueur made by steeping ume fruits (a type of Japanese plum or apricot) in alcohol and sugar.  The fruit itself is quite tart and sour, but when infused into alcohol, it creates a sweet, fruity, and slightly tangy flavor profile that balances well with the sugar.  Umeshu is highly popular in Japan and has gained international attention due to its unique flavor. It is often homemade in Japan, with families passing down their own recipes.
