Shochu

Shochu is a traditional Japanese distilled spirit, typically made from a variety of base ingredients such as barley, sweet potatoes, rice, or buckwheat. It differs from sake, which is brewed, while shochu is distilled, giving it a higher alcohol content, typically ranging from 25% to 30%. Shochu is nearly clear in color, occasionally with a very pale yellow hue, depending on the brand and type.  It is enjoyed in several ways: straight, on the rocks, diluted with water, or mixed into cocktails.  Shochu is not to be confused with Soju, which is Korean and has a lower alcohol content, usually ranging between 16%-25%.

There are two primary types of shochu:

  1. Ko-rui shochu: Distilled multiple times, resulting in a cleaner, lighter flavor, and is often used for cocktails or as a mixer.
  2. Otsu-rui shochu: Single-distilled, preserving more of the base ingredient’s flavor, making it a richer, more complex spirit.

Shochu can be quite versatile and varies in taste depending on the ingredient used, ranging from earthy and robust (sweet potato-based) to smooth and nutty (barley-based).
