The White Witch

1 1/2 oz La Strega* honey simple
1 oz Lime juice
4 oz Club soda

- 1 cup water
- 1 cup honey
- 1 bay leaf
- 2 whole cloves
- 1/4 tsp. fennel seeds
- 1 sprig of mint
- 2 large basil leaves
- 1 (one inch) sprig of rosemary
- Pinch of saffron threads

This mocktail takes its name from the simple used in its creation, la strega, which is Italian for “the witch.” The ingredients in this simple are complex, and evokes images of a haggard spellcaster brooding over her cauldron of ill-repute. As a mocktail, the lack of alcohol gives it the name, “The White Witch,” versus its more devious alter ego, “The Wicked Witch,” which involves the addition of gin.
To make this delightful mocktail, add the honey simple and lime juice to shaker with ice, and shake until very cold. Pour contents into a rocks glass with fresh ice. Top with club soda.
Garnish with a mint sprig and lime wheel.
