The term “blind” in names like Blind Pig or Blind Tiger goes back to the 19th century, before Prohibition officially began in 1920.  They were originally old slang terms for establishments that sell illicit liquor. The names arose in the days when sideshow or roadside attractions offered a glimpse of exotic or weird creatures.

"Blind pigs" circumvented the law by pretending to offer a legitimate attraction, like a "blind pig" or a "blind tiger," and then serving alcohol “complimentary" with the ticket purchase.
