Caprese Cooler

  • 1 oz. Tomato Water
  • 1/2 oz. Cold-pressed Basil
  • 1 drop Balsamic vinegar
  • Pinch of salt

Embrace the sunny summer days with a burst of flavor. Indulge in this Italian-inspired palate cleanser that will awaken your taste buds with the invigorating flavors of Caprese.

To make tomato water, puree 5-7 ripe tomatoes with a few slices of cucumber and salt. Fine strain (this will take time) and remove the solids.

To cold press the basil, combine 2-3 bunches of fresh basil into a half gallon of iced water. For best results, let the basil/water rest for 12-24 hours.

Combine ingredients, stir on ice, and strain into a cordial glass. Garnish with a basil leaf. (A little mozzarella never hurts, as well…)
